Soreen Layer Cake Recipe

Think of this cake as a comfy bed made from Soreen.




1 x Soreen Banana loaf

600ml full fat milk

250g Icing Sugar

1 x Sachet Custard Powder

60g Cocoa powder

150g Unsalted butter

150g digestive biscuits

½ teaspoon vanilla essence


Grab the 20cm flan dish and cover its bottom with broken up digestive biscuits.

Make up the custard with the milk, see instructions on the pack and when it’s ready pour on top of the biscuits

Leave it alone to chill for out for one hour

In the meantime slice the Soreen loaf into 1cm slices. Cover the cool custard with the Soreen. Keep going until there are no custardy bits peeping out.

Now for the yummy bit; to make the chocolate buttercream.  Put the butter, icing sugar, cocoa powder and vanilla essence together in a bowl, mix well till smooth and creamy

Spread this over the Soreen and put in the fridge to set

Serve cut into slices, great with a cup of coffee or tea.
