Soreen Filo Parcels Recipe

If these were in a postman’s sack they wouldn’t make it through the letterbox they’re far too tasty.

Recipe

Makes about 20 parcels

Ingredients:

1 x Soreen Fruity Five or Cinnamon and Raisin loaf

1 x orange, zest and juice

2 x tablespoons clear honey

Pinch of ground ginger or cinnamon

270g pack Filo pastry

25g butter

Method:

Preheat the oven to 180c/350f/gas4

Chop the Soreen into medium chunks

In a food processor add the Soreen, orange juice and zest, honey and the spices. Make sure the lid is on.

Blend well until its lovely and sticky!

Roll the filo pastry and cut into 75mm squares. (Don’t feel guilty about using shop bought pastry, all the top chefs do it!)

Layer three square sheets on top of each other, with a light brushing of butter between each sheet

Put a teaspoon of the mixture in the centre of the pastry and bring the sides up to the centre form a parcel, twist the top to seal and brush with a little butter. They could look like a cute present.

Bake the parcels in the oven for 10 mins, till golden brown.

Serve with a big dollop of double cream for dipping and dunking.
