INGREDIENTS:
6 ripe peaches or nectarines
punnet of blackberries
few drops of brandy
few drops of vanilla esence
1 tub of marscapone
2 oz of demerera sugar
1 Soreen Lincolnshire Plum fruit loaf
Cut the peaches in half and discard the
stones. Place in a baking tray
(cut side up) and put a few blackberries
on top. Mix the brandy and vanilla with
the marscapone and spoon on the
peaches. Sprinkle with sugar and grill
until it caramelises. Meanwhile, cut off
the crusts of the Soreen Lincolnshire Plum
Loaf and slice into 6 equal slices.
Toast the slices and place the peach
mixture on top. Serve with single cream.
